Unfortunately it is not possible to modify the HTTP response header to obfuscate Cloudflare https://developers.cloudflare.com/rules/transform/request-header-modification/. As this community post points out https://community.cloudflare.com/t/can-we-hide-cloudfare-server-name-in-http-response-header/317141, there are other ways of finding the serving platform, e.g., through IPs owned by Cloudflare Inc. or various other response headers (cf-cache-status, cf-ray, etc), which reduces the effectiveness of removing Server Name.
